"What?…
Fish for breakfast?"
Recently
my wife and I took a late afternoon walk
through Hudson Mills Metro Park and
finished it off with a stop at the
Lighthouse Cafe for dinner. Owner Steve
Varney has recently added fresh trout
to the dinner menu which both my wife
and I love, not only for the taste of it,
but also from the fact that the trout comes
from our own Spring
Valley Trout Farm just outside the village on Island
Lake Road. During our meal, we asked our
server, Breanne if the trout was gaining popularity
with the Lighthouse patrons. She
replied that it has become quite
popular, especially for breakfast! My
initial reaction was, "What?
Breakfast? Fish for Breakfast?". After
finishing our meal I stole Steve from
his kitchen for a moment to ask him for
the rest of the story. He told me that after
selling only one fish the first dinner it was
on the menu, he went home feeling quite
discouraged. It was Sandy, his wife and
tireless partner at the restaurant, who suggested
giving the trout another try this time
on the breakfast menu.
He said that his initial reaction was, "What?
Breakfast? Fish for Breakfast?" Then,
apparently Sandy asked Steve to recall
their days of camping and cooking over
an open fire. "We ate fish for breakfast all
the time", he recalls. So the next morning he
offered on the Lighthouse breakfast menu.
"How did it fare?", I inquired. "We sold
the heck out of it", recalled Steve. So locally
raised trout is now being served
at our Lighthouse Cafe downtown, available
whenever they are open; dinner, lunch,
and breakfast. Yep, Fish
for Breakfast! Have a
